Chef Akira Back was a professional snowboarder before the thrill of the kitchen led him to pursue cooking full-time. After setting up establishments in Las Vegas, he expanded his brand in Asia by opening his eponymous restaurant in India and Indonesia, then in Singapore. His must-try dish is the tuna pizza, cooked to a crunchy crust and topped with slivers of fresh tuna, umami aioli and a drizzle of truffle oil.
