Hai Tien Lo
Hai Tien Lo is one of Singapore’s most innovative, enduring Cantonese restaurants. Creating interesting riffs on classic Cantonese dishes can be tricky (and risky), but it innovates in a way that doesn’t alienate traditionalists. For example, its signature Trio of Treasure appetiser features foie gras for a Western twist, but satisfies traditional palates with pan-fried scallops and barbecued duck. Diners looking for comfort food won’t be disappointed with dishes such as double-boiled fish maw with bamboo pith in fish bone broth and saltcrusted stewed chicken with dried scallops in lotus leaf. The service is exceptional— staff are friendly, unobtrusive and chatty without being overbearing.
