Chocolate shards with pomegranate seeds
Use only the best fresh pomegranate seeds to make this delicious after-dinner treat. This, too, makes a lovely gift for the host of the next dinner party you’re invited to.
Serves 4 Cooking time 10 minutes, plus cooling time
You need
• 2 tablespoons (30ml) sesame seeds • 100g good-quality dark chocolate
(70% cocoa) • 1 cup (250ml) unbruised
pomegranate seeds • a pinch of sea-salt flakes
This is how
Toast the sesame seeds in the oven or in a dry pan until they’re fragrant and starting to change colour. Chop the chocolate into chunks and melt them in a glass bowl over a saucepan containing water that’s simmering gently – the bowl must not touch the water.
Place a sheet of baking paper on a baking tray. Scrape the melted chocolate onto it and spread it using the back of a spoon. Sprinkle evenly with the sesame seeds, followed by a layer of the pomegranate seeds. Sprinkle the sea salt flakes over the top and refrigerate the tray for at least an hour.
Break the chocolate into shards, cover with plastic and enjoy within two days. Remove from the fridge an hour before you plan to serve it so that it can reach room temperature. It’s delicious with coffee after dinner.
