HOW TO TURN FLAX INTO EGG
If you’re following a vegan diet or are steering clear of eggs, the flax egg is your new best friend. Simply grind flaxseeds (also called linseeds) into a fine powder in a coffee or spice grinder if you haven’t bought them already ground. Then mix 1 T ground flaxseeds with 3 T water to replace each egg in recipes for pancakes, muffins, waffles and quick breads. (Flax has a slightly nutty flavour, so work with recipes containing complementary flavours.)
