SESAME-CRUSTED AVOCADO WEDGES

aquafaba (chickpea brine) ½ cup lemon juice 1T almond flour 50 g sesame seeds 75 g smoked paprika 1t sea salt 1t avocados 2, halved and stoned
For the dressing, mix: soya sauce 2T sesame oil 2T rice vinegar 1T palm sugar 1T chilli flakes 1t
1 Preheat the oven to 200°C and line a baking tray with greaseproof paper.
2 Pour the chickpea brine and lemon juice into a bowl and set aside. 3 Mix the almond flour, sesame seeds, paprika and salt in a separate bowl. 4 Peel the avocados and slice into thick wedges.
Dip the avocado wedges into the brine, then into the almond-and-sesame mixture, ensuring they’re well coated.
5 Place the avocado wedges on the baking sheet and bake for 15 minutes, or until golden. 6 Serve with the dressing. CARB-CONSCIOUS, DAIRY-FREE, MEAT-FREE
