CREAMED AVOCADO TOAST 3 WAYS

For the creamed avocado: avocado 1, peeled lemon 1, juiced
Dijon mustard 1t sea salt and freshly ground black pepper, to taste Place all the ingredients in a blender and process until smooth and creamy.
1. AVOCADO, CHEVIN AND POMEGRANATE TOAST
pomegranate rubies 100 g lemon 1, zested fresh mint 1 t, chopped Woolworths Cape seed bread 2 slices, toasted creamed avocado (see left) chevin 50 g microherbs, to garnish
1 Mix the pomegranate rubies with the lemon zest and mint.
2 Top the bread with the avocado, chevin, pomegranate mixture and microherbs.
FAT-CONSCIOUS, MEAT-FREE 2. AVOCADO, RADISH AND ANCHOVY TOAST
Woolworths crushed wheat sourdough bread 2 slices, toasted creamed avocado (see far left) anchovies 3, smashed chives 2 t, chopped dill 1 t, chopped radishes 6, thinly sliced olive oil, for drizzling
1 Spread the bread with the creamed avocado, then top with the anchovies, chives and dill. 2 Layer the radishes onto the avocado and drizzle with olive oil. FAT-CONSCIOUS, DAIRY-FREE
3. AVOCADO, KALE AND TAHINI TOAST
kale 8 leaves olive oil 2T sea salt and freshly ground black pepper, to taste creamed avocado (see opposite) Woolworths ancient grain brown bread 2 slices, toasted tahini, for drizzling
1 Preheat the oven to 180°C. Place the kale onto a baking tray, drizzle with olive oil and season. Bake for 10 minutes, shaking the pan often, until the kale is crisp. 2 Spread the avocado onto the toasted bread, top with the kale and drizzle with tahini.
