Place 300 g Huletts sugar, the juice of 1 lemon and 1½ cups water in a saucepan over a medium heat. Stir until the sugar has dissolved. Add 300 g chopped strawberries and increase the heat. Simmer for 10 minutes, then remove from the heat and stir in 2 T rose-water. Press the mixture through a fine sieve or cheesecloth to remove the seeds. Store in a clean, sterilised bottle.
Mix a little sugar with dried rose petals. In a separate bowl, whisk 1 free-range egg white until frothy. Dip the rim of a glass into the egg white, then into the sugar mixture. Fill a glass with ice, add some cordial and top with sparkling water.
