Chef Giles Edwards cut his teeth at St John in London and brought this style of food to SA. At La Tête on Bree Street you might get a whole mustardy cauliflowe­r cheese in an ovenproof dish; liver, peas and bacon; or a perfect plate of warm madeleines, all served simply on white crockery. “For me, it’s purely about flavour,” says Giles. “Is it delicious? If not, it’s not going on the plate.”
