La Tête in Cape Town

Chef Giles Edwards cut his teeth at St John in London and brought this style of food to SA. At La Tête on Bree Street you might get a whole mustardy cauliflower cheese in an ovenproof dish; liver, peas and bacon; or a perfect plate of warm madeleines, all served simply on white crockery. “For me, it’s purely about flavour,” says Giles. “Is it delicious? If not, it’s not going on the plate.”
