Chef Giles Ed­wards cut his teeth at St John in Lon­don and brought this style of food to SA. At La Tête on Bree Street you might get a whole mus­tardy cau­li­flower cheese in an oven­proof dish; liver, peas and ba­con; or a per­fect plate of warm madeleines, all served sim­ply on white crock­ery. “For me, it’s purely about flavour,” says Giles. “Is it de­li­cious? If not, it’s not go­ing on the plate.”
