These nuts are so mor­eish you’ll have to make ex­tra batches. They’re great to snack on with drinks, to add to a cheese­board, or to give away as a spe­cial home-made gift.

BROWN SUGAR, OR­ANGE AND SMOKED SALT PE­CANS

free-range egg white 1 pe­cans 300 g or­ange zest 2t white sugar 2T brown sugar 1T smoked sea salt flakes 1T

1 Pre­heat the oven to 160°C and line a large bak­ing tray with grease­proof pa­per. 2 Whisk the egg white un­til foamy, then toss the pe­cans, or­ange zest, sugar and salt into the egg white, coat­ing well.
