CINNAMON, APPLE AND VANILLA OAT BOWL

rolled oats 150 g coconut milk 1 litre ground cinnamon 1t ground nutmeg ¼t sea salt 1t vanilla pod 1, seeded
Muscovado sugar 4T green apple 1, cut into matchsticks
1 In a medium saucepan, combine the oats, coconut milk, cinnamon, nutmeg, salt and vanilla seeds. Cook for 10–12 minutes or until the oats are tender. 2 Sprinkle with the sugar and top with the apple.
Cook’s note: Use coconut sugar if you prefer it to Muscovado.
