MACKEREL ON TOAST WITH TARTARE SAUCE

Woolworths mackerel fillets 2 x 230 g salt, to taste ciabatta 2 slices
For the tartare sauce, mix: good-quality mayonnaise 4T gherkins 3, finely chopped red onion ½, finely chopped parsley 10 g, roughly chopped wholegrain mustard 1T sea salt and freshly ground black pepper, to taste
1 Salt the mackerel fillets and braai over medium coals until cooked. 2 While the mackerel is cooking, toast the ciabatta on the braai until crispy and charred.
3 Serve the mackerel on the toast with the tartare sauce.

WINE: Woolworths Warwick Cape Lady Chardonnay 2019 the curing process is complete, the drying process will begin. 2 Dust off any excess salt from the mullet and hang up in a well ventilated area to dry. The length of time for the drying process will depend on your location, on average it should take 2–3 weeks. The bokkoms will be very dry to the touch and have a distinctive salty smell when ready.
