SILVERS WITH MELTING CHARRED TOMATOES

For the melting tomatoes: olive oil 3T ripe tomatoes 6, halved onion 1, cut into rings red onion 1, cut into rings butter 2T sea salt and freshly ground black pepper, to taste
silver fillets 4 olive oil 3T sea salt and freshly ground black pepper, to taste 1 To make the melting tomatoes, heat the olive oil in a cast-iron pan over hot coals and cook the tomatoes and onions until caramelised. Add the butter and seasoning and cook for a further 2–5 minutes. 2 Season the fish with olive oil, salt and pepper, then braai over medium coals. Serve with the tomatoes.
