Try lamb cooked upright in a hinged grid for five hours to render the fat. Take the lamb off the heat every 45 minutes and squeeze over lots of fresh lemon juice and season with black pepper. Finish with a last sear over the flames. They will be fall-off-the-bone tender but crisp.
