oxtail 1.5 kg flour 2T oil 3T large onion 1, chopped garlic 2 t, minced carrots 2, roughly chopped tomatoes 2, chopped bay leaves 2 thyme 4 sprigs sugar 1T red wine 1½ cups beef stock 1 cup sea salt and freshly ground black pepper, to taste rice or mashed potato, for serving
