Woolworths Norwegian salmon with pastry lattice 1

1 Preheat the oven to 220°C. Remove the sleeve, film and glaze sachet from the tray. Place the tray in the middle of the oven on a baking sheet. 2 Bake for 20–22 minutes, or until cooked through and the pastry is golden brown. Remove the tray from the oven and drizzle the glaze over the fish while still hot. Serve immediatel­y.

GRILLED SUMMER GREENS WITH SALSA VERDE AND CRISPY TEMPURA ONIONS

Preparatio­n: 30 minutes Cooking: 20 minutes

For the crispy onions: baby red onions 3, sliced flour, for dusting

canola oil 2 cups

For the grilled summer greens: Woolworths Tenderstem broccoli 400 g Woolworths fine green beans 150 g Woolworths asparagus spears 350 g

For the salsa verde, mix: gherkins 5, chopped gherkin pickling liquid 3T olive oil 5T garlic 1 clove, crushed anchovy fillets 2, chopped parsley 3 T chopped sea salt and freshly ground black pepper, to taste

Woolworths white balsamic vinegar 1T capers 2T

1 To make the crispy onions, dip the onion in water, then into the flour. Shake off any excess flour and repeat. Fry in batches in the oil until lightly golden and crispy.

2 While you’re frying the onions, blanch the asparagus and green beans for 2 minutes in salted, boiling water. Blanch the broccoli for 5 minutes. 3 Heat a griddle pan until smoking hot, then cook the greens in batches for 1–2 minutes on each side until lightly charred and tender. 4 Serve the greens and onions with the salsa verde. SWEET POTATO MASH WITH MAPLE BACON BITS

Woolworths wood-smoked streaky bacon 1 x 200 g pack, chopped maple syrup 2T butter 1T

Woolworths sweet potato mash

1 kg, cooked

1 Fry the bacon in its own fat until just crispy. 2 Drain off any excess fat and add the maple syrup and butter to the hot pan to coat the bacon and become slightly sticky. Serve over the sweet potato mash. WHEAT- AND GLUTEN-FREE
