Throughout all the COVID restrictions we have endured, I have eagerly waited for our family Christmas gathering, and as soon as the December TASTE magazine hit the shelves I grabbed a copy and settled down to dream, plan and scheme a TASTE-inspired menu to banish the COVID blues and celebrate family, laughter and love. I turned to page 94 and spotted easy Jaffa cakes, and childhood memories flooded my mind. I was born in the UK, and spent most of my childhood there. My parents were hardworking and loving, but they didn’t spoil us with many treats. Except at Christmas. My mother loved Jaffa cakes and would always buy them as a Christmas treat, rationing them out before putting them back in a locked cupboard. To make mine last longer, I would turn the Jaffa cake upside down and nibble off the sponge until I reached the orange jelly. Then I would lick the jelly, savouring each citrusy slurp, until I finally reached the dark chocolate (which had begun to melt on my fingers). I tried so hard to eat that chocolate slowly, but my taste buds had different ideas, and before I knew it, my little treasure was gone. I was licking my fingers and had to wait another 24 hours for the next one! Over the years I have occasionally spoilt myself and bought a box from the shops, but they have never been the same. So you can imagine the joy on finding your recipe. I had to make it. Immediately. And it didn’t disappoint! Thank you for the joy of discovering that I can now make my little Jaffa treasures whenever I want.
