Hitesh, Hriday and Tushar Panchal, and Satish Mangalore, Kapoochka

Serving what Hitesh calls The King of Indian street food, golfball-shaped pani puri (also known as poochka), this spot has become known for both its classic poochkas (spicy potato, bean sprouts, chickpeas, coriander, garlic, chilli and tamarind) and some frankly rather inventive ones. Think crispy pastries stuffed with banoffee pie or tandoori chicken, prawn and creamy mushroom. The goal? “To create snack food that not only tastes great, but takes you to the buzzing streets of my Mumbai, and for those who miss home to feel at home.”
