BALSAMIC VINEGAR
Investing in a good balsamic vinegar is the key to mastering many new recipes. I love adding it to roasts, and for marinating lamb chops and steaks for a caramelised sweetness that isn’t overpowering. It’s especially good in the pork dish opposite (recipe on page 64). You can also try it with pork fillet, pork chops or pork belly.
