Chickpeas are my go-to, any day of the week! There is something so addictive about their natural creaminess and nutty flavour. They stand up in a spicy curry, add texture to salads when roasted until crispy, and add a glorious richness to dressings like this one. This recipe is delicious as is or as a side to lamb chops or ostrich burgers.
