Boiled or steamed as a snack, with a little salt. Your first time? Use your front teeth to squeeze the beans directly from the pod into your mouth. Don’t eat the shells – they’re a little tough for digestion.

David Yan recommends leaving the boiled beans to marinate in garlic, chilli and sesame oil in the fridge overnight, then serving them cold. Yum!

Purée or mash and serve on toast with avo, salt, pepper and a squeeze of lemon juice.

Use them as a protein boost for salads, freshly boiled and cooled, or sautéed in a little peanut or sesame oil.
