Use hard wood to create long-burning coals and have a separate fire on the side to replenish coals if necessary. Keep the main fire small and keep it going.

The ideal is glowing red coals and not active flames. Shift the coals around so they are not directly under the potjie, but rather on the outside of the legs. This prevents the food from scorching.
