You may not have tasted them, yet, but tiger nuts, also known as chufa nuts or earth almonds, have been around for centuries. The Spanish have been using them to make

horchata (a creamy drink) since the 1700s. But here’s the twist – they’re not actually nuts, they’re tubers, like sweet potatoes, just much smaller. The name comes from the stripes on their exterior.
