TURKEY TACOS

olive oil 2T
Woolworths turkey mince 500 g Woolworths Mexican-spiced tomatoes 1 x 400 g can fresh coriander 20 g, chopped corn taco shells 12 sea salt and freshly ground black pepper, to taste avocados 2, smashed lime 1, juiced baby gem lettuces 1–2, finely shredded thick sour cream 1 cup strong Cheddar or mild mozzarella
100 g, grated chipotle sauce, to taste
1 Heat the oil in a large non-stick pan. Add the mince and fry for 1–2 minutes, or until it changes colour. Add the tomatoes and stir-fry for 5–8 minutes, or until the mince is cooked and the sauce reduced. Add the coriander and check the seasoning.
2 Heat the tacos according to package instructions. Turn the turkey-and-tomato mixture into a bowl and keep warm at the table along with the tacos. Mix the avocado with the lime juice and seasoning. 3 Assemble the tacos at the table.
