SERVING SUGGESTION:

Heat a little olive oil and a handful of thyme in a pan. Fry 3 packs sliced mixed mushrooms in batches. Strain off the liquid and set aside. In the same pan, fry 3 sliced shallots and 2 crushed garlic cloves until translucen­t. Add the fried mushrooms, then 1/2 cup vegetable stock and cook until the mixture reduces by half. Stir through 1/2 cup sour cream and 6 T plain yoghurt, then season to taste. Remove from the heat and serve with cooked Woolworths’ fresh gnocchi (plain or Gorgonzola).
