RED ONION AND RADISH SALAD

• 1 red onion, finely sliced • 200g radishes, finely sliced • 150g mooli radish (Daikon), peeled (optional) • 2 tbsps white wine vinegar • 1 tsp caster sugar • 1 tbsp orange juice • 1 fresh red chilli, deseeded and finely chopped • Seeds of half a pomegranat­e • 1 tbsp flat-leaf parsley, finely chopped

METHOD

1 Place the onion and radish in a bowl of ice cold water. Leave for 5mins. In another bowl dissolve the sugar in the vinegar, then stir in the orange juice and red chilli. 2 Drain the onion and radishes in a colander, transfer to a serving bowl and toss with the dressing. Scatter with the pomegranat­e seeds and parsley and serve.
