Vanilla & chocolate marble traybake

This is a lovely variation on the basic traybake – a visual treat perfect for the school cake sale.

Makes 16 pieces Prep 10 mins Q Q Cook 30-35 mins Q 225g unsalted butter, plus extra

for the tin 225g caster sugar 275g self-raising flour 1 level tsp baking powder 4 large eggs 4 tbsp milk 1 tsp vanilla extract 25g cocoa powder sifted icing sugar (optional)

1 Heat oven to 180C/160C fan/ gas 4. Butter a 30 x 23cm traybake tin and line with baking parchment.

2 Measure all the ingredient­s except the cocoa into a large bowl and beat well with an electric mixer until light and fluffy. Place half the mixture in another bowl and add the cocoa powder, then mix until well blended.

3 Place large spoonfuls of both cake mixtures in the tin, then swirl the two colours together using a skewer to create a marbled effect.

4 Bake in the preheated oven for 30-35 mins, or until the cake has shrunk a little from the sides of the tin and springs back when pressed in the centre with your fingertips. Leave to cool in the tin. Sprinkle with icing sugar, if you like, and cut into 16 pieces to serve.
