Cooking on the coals
When cooking with charcoal, build your barbecue with lots of coals on one side, graduating to none on
the other. This will give you a range of temperatures to cook over.
Be patient. Once you’ve lit your coals, they will take about 40 minutes to reach the optimum temperature, and will give you about 30 minutes of cooking heat. For longer cooking, keep adding a few more coals every 10 minutes to maintain the heat.
