Just store everything in airtight containers, or wrap well in foil or cling film

Up to two weeks ahead, make the biscuits. A week ahead, make the ginger cake. Three days before, make the oat squares. The day before, make the banana cake, citrus bars and cupcakes. On the day, make the rock cakes.
