HOW TO PREPARE A PUDDING BASIN FOR STEAMING
1 Lay a large sheet of baking parchment over a large sheet of foil, and fold a pleat across the middle to allow for expansion. 2 Cover the basin with the parchment and foil, foil-side up, and smooth down the sides. 3 Tie securely with string, then trim off excess. 4 To steam the pud, put a jam jar lid into a large pan to act as a trivet. Put the pudding on top and pour boiling water to reach one-third of the way up the bowl. Cover, bring the water to the boil and simmer, topping up the water as necessary.
