For bakes, puds, cocktails and cold cures… grab a lemon
Lemon syllabub
Whip 300ml cream and I UWICT until soft peaks form. Stir in 50ml white wine, along with the juice and most of the zest of ½ a lemon. Spoon the mixture into glasses, sprinkle with the TGOCKPKPI \GUV and serve with crisp biscuits. Serves 4.
Lemon drop
Mix 1 tbsp white caster UWICT ÜĶÌij Ìiji wOEiŃÞ }À>Ìi` zest of ½ a lemon. Dip the rim of a chilled martini glass in water, then shake off the excess and dip into the sugar mix. Pour ON|XQFMC into a cocktail shaker and add 25ml triple sec, 25ml lemon juice and a handful of ice. Shake really well, then strain into the glass. Makes 1.
Iced lemon mousses
Tip 2/3 of a jar of lemon curd into a large bowl with the zest of 1 lemon and 300ml double cream, then beat with an electric whisk until it just holds its shape. Spoon the mixture into six small glasses, alternating layers with the remaining lemon curd from the jar. Cover and freeze the mousses for 40 mins before serving. Makes 6.

Heat oven to 200C/180C fan/gas 6 and line a 22cm shallow cake tin. Rub I cold butter with I RNCKP ƃQWT, I ITQWPF rice and I ECUVGT UWICT. Stir in |VDUR OKNM. Press into the tin and bake for 15-20 mins. Remove and lower heat to 180C/160C fan/gas 4. Mix 200ml lemon juice and GIIU, then whisk with I ECUVGT UWICT, I RNCKP ƃQWT and the zest of 3 lemons. Pour over the base. Bake for 10-15 mins. Cool, dust with KEKPI UWICT, and slice. Makes 12.
Lemon & IKPIGT VGC
Divide the juice of oe|C|NGOQP between two mugs. Slice another oe|C|NGOQP and add to each mug with a 2cm piece IKPIGT. Add DQKNKPI YCVGT and leave to steep. Stir in honey, if you like. Serves 2.
