Heat 1 tbsp olive oil and fry 5 chopped streaky ba­con rash­ers for a few minutes. Tip in a 400g can chopped toma­toes. Bring to the boil, then re­duce the heat and sim­mer for 15 mins. Add 250g frozen peas, mix well and re­turn to the boil. Cover and cook for 5 mins. Stir through 3 tbsp mas­car­pone and a small hand­ful of torn basil leaves.
