2 eggs

1 tbsp crème fraîche

25g cheddar, grated small bunch of chives, finely sliced 1 spring onion, sliced

1 tsp vegetable oil

3-4 cherry tomatoes, halved 2 slices crusty bread, toasted 1 Beat the eggs, crème fraîche, cheese and chives together with a little seasoning.

2 Heat the oil in a pan, and cook the spring onion for a few minutes. Add the tomatoes and warm through, then pour in the egg mixture. Cook over a low heat, stirring, until the eggs are just set. Spoon over the toast. PER SERVING 571 kcals, protein 30g, carbs 42g,
