Roast feta

Make an easy meal for two with this simple feta dish served with pitta bread. Just pop the bread in the toaster to warm through.

vegetable antipasti
1 lemon, zested and juiced
200g feta olive oil, for drizzling (optional) 2 large wholemeal pitta breads
1 Tip the antipasti and its oil into a roasting tin, squeeze over the lemon juice and put the feta in the middle of the tin. Season with black pepper and drizzle over a little extra olive oil, depending on how oily the vegetables are.
2 Bake at 180C/160C fan/gas 4 for 25 mins. Toast the pittas for 1-2 mins until warmed through. Scatter the lemon zest over the feta. Serve with the warm pittas. PER SERVING 540 kcals, fat 28g, saturates 15g,
