Caramelised apple & walnut strudel

100g golden granulated sugar 1 vanilla pod, seeds scraped out 4 dessert apples, such as Granny Smith or Braeburn, peeled, cored and chopped
25g each currants and sultanas 1 tsp ground allspice
1/2 tsp ground nutmeg
85g walnuts, chopped
6 large sheets filo pastry
50g butter, melted
200ml crème fraîche, to serve
1 Heat the oven to 200C/180C fan/gas 6. Heat 75g sugar and the vanilla seeds in a medium heavy-based frying pan over a medium-low heat for 5-8 mins, or until golden. Add the apples, currants, sultanas, spices and walnuts, then cook for 10 mins
