1.5kg chicken

3 tbsp olive oil

3 red onions, cut into large wedges 1 butternut squash, peeled, deseeded and

cut into wedges bunch of sage, leaves picked

100g walnut halves, very roughly chopped splash of sherry vinegar

1 Heat the oven to 220C/200C fan/gas 7. Put the chicken in a large roasting tin. Drizzle with a little of the oil, then season. Roast for 30 mins, then remove from the oven. Scatter the onion and squash around the chicken, drizzle with the rest of the oil and toss through the pan juices.

2 Return to the oven for 45 mins, then remove again, scatter over the sage and walnuts, then drizzle the vinegar over everything. Return to the oven for a further 15 mins until the chicken is cooked. Remove the chicken and leave to rest, keeping the veg warm in a low oven. Serve with some creamy mash (see below).
