Stuffed deli loaf

Perfect for picnics or lunch in the garden. Serves 2 Prep 10 mins No cook

1 ciabatta or crusty loaf

2 tbsp olive oil

2 tsp red wine vinegar

1/2 garlic clove, crushed handful of rocket 1 mozzarella ball, sliced small red onion, finely sliced 1 large or 2 small red peppers

from a jar, halved

6 slices of salami 1 Slice the bread in half horizontal­ly. (Pull out some of the bread if it’s really thick and freeze to use as breadcrumb­s later.) Mix the olive oil, red wine vinegar and crushed garlic and brush both sides of the bread.

2 Layer up the rocket, mozzarella, red onion, peppers and salami, seasoning as you go. Wrap in baking parchment or foil. Slice into 2 or 4 to serve.
