Stuffed deli loaf
Perfect for picnics or lunch in the garden. Serves 2 Prep 10 mins No cook
1 ciabatta or crusty loaf
2 tbsp olive oil
2 tsp red wine vinegar
1/2 garlic clove, crushed handful of rocket 1 mozzarella ball, sliced small red onion, finely sliced 1 large or 2 small red peppers
from a jar, halved
6 slices of salami 1 Slice the bread in half horizontally. (Pull out some of the bread if it’s really thick and freeze to use as breadcrumbs later.) Mix the olive oil, red wine vinegar and crushed garlic and brush both sides of the bread.
2 Layer up the rocket, mozzarella, red onion, peppers and salami, seasoning as you go. Wrap in baking parchment or foil. Slice into 2 or 4 to serve.
