1 Coffee & cardamom

Add 50ml cooled strong coffee and the crushed seeds from

4 cardamom pods to the cake batter. While the cake cools, mix 100g icing sugar with 25ml strong coffee, then spread over the cooled loaf cake, decorating with extra white icing

2 Orange, honey & mascarpone

Add 3/4 of the grated zest from 2 oranges to the cake mixture. Once the cake has cooled, mix 100g mascarpone with the juice of 1/2 orange and 2 tbsp honey. Spread over the cake and scatter over the remaining orange zest.

3 Raspberry & pistachio

Fold 80g raspberrie­s and 50g chopped pistachios into the batter, then bake the cake for an extra 10 mins. While the cake cools, mix 100g icing sugar with 6 raspberrie­s to make a rough icing. Spoon over the cooled loaf and top with a handful of chopped pistachios.
