After starting his career in New Delhi, Sangwan moved to London where he has managed a string of the capital’s finest Indian restaurant­s, such as Gymkhana and Trishna. Now he’s operations director at Jamavar, which is nominated for the Newcomer Restaurant of the Year in our 2017 Reader Awards. You’ll notice his love of French labels and dessert wine in this month’s matches.
