Artisan burgers

Nearly every restaurant has its take on a gourmet burger. Across the UK, around one in five people visited an artisan burger bar last year.

Barbecue

Chefs flocked to the Deep South in the Noughties and came back with inspiratio­n. The most barbecue joints in the UK opened in 2014.

Middle Eastern

Yotam Ottolenghi popularise­d the authentic flavours of the region when he opened his first eponymous restaurant in London in 2002.

Scandinavi­an

As Noma became Best Restaurant in the World in 2010, Scandi trends – fermenting, saltbaking – were adopted up and down the UK.

Modern European

A trend that has stood the test of time. It refers to places that serve a variety of cuisines on one menu, often with Italian, French and British dishes.

Japanese

The sushi boom on high streets characteri­sed the late 1990s. Since then, the likes of Nobu and Roka have shown us how refined it can be.
