What is “umami” ?

We have developed a technology to process delicate fermented foods into flavourful spices of "umami". Umami, an element of taste, is now attracting attention. Hayakawa Shoyu Miso K.K., a traditiona­l Japanese company that has been in business for over 135 years, has designed a new type of spice with the aim of combining it with the world's food culture. The project is the result of seven generation­s of traditiona­l techniques and innovation­s in the production process, which will finally come to a head in 2021.
