What is “umami” ?
We have developed a technology to process delicate fermented foods into flavourful spices of "umami". Umami, an element of taste, is now attracting attention. Hayakawa Shoyu Miso K.K., a traditional Japanese company that has been in business for over 135 years, has designed a new type of spice with the aim of combining it with the world's food culture. The project is the result of seven generations of traditional techniques and innovations in the production process, which will finally come to a head in 2021.
