Osteria senz’oste,valdobbiad­ene

Literally translated it means ‘osteria without a host’. At this magical honesty bar, a former stable set high up in the vineyards close to Valdobbiad­ene, customers help themselves to prosecco along with cheese, bread and salami (you leave money in a wooden box). Pillonetto Silmava

An austere, old-fashioned osteria run by Silmava Pillonetto, whose parents opened it 70 years ago (her father Giocondo was also the mayor of the town). ‘These are dying out in Italy. There are so few wine bars like this any more,’ says Dusi. It hosts book readings and serves prosecco col fondo, aperitivo and digestifs.
