CATHERINE WHEEL PESTO AND PARMA HAM PUFFS
320g packet ready-rolled sheet puffed pastry
Flour for dusting
145g tub pesto
75g grated parmesan
6-8 slices Parma ham
Egg wash
Preheat oven to 180°C/350°F/GAS Mark
4. Dust surface sparingly with flour, roll out the puff pastry, keeping the rectangular shape, until very thin. Spread all over with the pesto, sprinkle over the Parmesan and then cover with the ham.
Roll up into a long cylinder dusting off any excess flour and, using a sharp knife, cut into 1cm coin-shaped pieces. Place these on a greased sheet and bake in the oven for 12-15 minutes. Remove from the heat and transfer to a plate. May be made in advance and reheated to serve.
