CATHERINE WHEEL PESTO AND PARMA HAM PUFFS

320g packet ready-rolled sheet puffed pastry

Flour for dusting

145g tub pesto

75g grated parmesan

6-8 slices Parma ham

Egg wash

Preheat oven to 180°C/350°F/GAS Mark

4. Dust surface sparingly with flour, roll out the puff pastry, keeping the rectangula­r shape, until very thin. Spread all over with the pesto, sprinkle over the Parmesan and then cover with the ham.

Roll up into a long cylinder dusting off any excess flour and, using a sharp knife, cut into 1cm coin-shaped pieces. Place these on a greased sheet and bake in the oven for 12-15 minutes. Remove from the heat and transfer to a plate. May be made in advance and reheated to serve.
