Chinese-style Chicken Wings
30 chicken wings Lemon/lime wedges
For the Marinade
4 x large cloves garlic, peeled and finely chopped or crushed
Large knob of fresh ginger, peeled and grated or roughly chopped onion, peeled and finely diced
Red chilli, finely chopped
4 tbsp dark soy sauce
4 tbsp oyster sauce
Place the chicken wings in a large china dish or bowl. Make the marinade by mixing together all the ingredients then slather and smear the wings thoroughly with it. Cover and leave to infuse in a cool place for between two to 24 hours.
Preheat the oven to 200°C/400°F/ Gas Mark 6. Double line a roasting tin with tin/aluminium foil and throw in the chicken wings and marinade. Cook for 45 minutes to an hour, turning occasionally, adding a splash of water to the pan each time.
When cooked, serve the wings on a platter lined with lettuce, wedges of lime or lemon and sweet chilli dipping sauce.
