Prince von Metternich, an Austrian diplomat and statesman, commission­ed a new cake to be made.

As his chef was ill, Franz Sacher – the chef’s sixteenyea­r-old apprentice – invented this chocolate cake, with a middle and top layer of apricot jam, plus a thin layer of chocolate icing.

This was in 1832. Within four years it would receive approval from the Emperor and Empress. Franz’s son, Eduard, went on to found the famous Hotel Sacher, where the cake is sold to this day.
