St Honore Cake
Honoratus, from Amiens in France, was the city’s bishop in the sixth century. Processions after he died were said to have prevented damage to the harvest.
He was honoured by bakers across the country and made their patron saint in the 17th century.
The cake made in his name is a test, with a puff pastry base, choux for the ring and the ornamental puffs, crème patissiere, caramel and crème chiboust – a whipped cream flavoured with liqueur.
