Set in the small market town of Sudbury, Suffolk, Cradle are centred around the ‘cradle to cradle’ ethos that reduces waste and reuses materials. Cradle’s objectives are built around encouraging people to make better and more informed choices about the food they are buying, eating and throwing away.
The fully vegan eatery buys and sources ingredients locally, and only use in-season produce to create their dishes. The menu changes weekly, depending on what’s in season, but past dishes have included delights like Fennel Tart with Courgette Tagliatelle, Globe Artichokes and Hickory Smoked Tempeh. Cradle’s menu is relatively small compared to what is deemed ‘normal’ in today’s restaurant scene. They understand that restaurants with more choice have lower standards and generate more waste. By bringing food-production in-house and minimising distributors, Cradle cuts packaging, conserves energy and resources and reduces food waste. The little food waste that they do produce goes directly into their own compost at their very own permaculture garden.
