Set in the small market town of Sudbury, Suffolk, Cradle are centred around the ‘cradle to cradle’ ethos that reduces waste and reuses materials. Cradle’s objectives are built around encouragin­g people to make better and more informed choices about the food they are buying, eating and throwing away.

The fully vegan eatery buys and sources ingredient­s locally, and only use in-season produce to create their dishes. The menu changes weekly, depending on what’s in season, but past dishes have included delights like Fennel Tart with Courgette Tagliatell­e, Globe Artichokes and Hickory Smoked Tempeh. Cradle’s menu is relatively small compared to what is deemed ‘normal’ in today’s restaurant scene. They understand that restaurant­s with more choice have lower standards and generate more waste. By bringing food-production in-house and minimising distributo­rs, Cradle cuts packaging, conserves energy and resources and reduces food waste. The little food waste that they do produce goes directly into their own compost at their very own permacultu­re garden.
