Lemon & Orange Loaf Cake
Makes 8 slices
Bake a delicious cake for that special afternoon treat.
Dry ingredients:
• 250g (8.8oz) self-raising flour
• 150g (5.3oz) caster sugar
• ½ tsp baking powder
• ½ tsp baking soda
• Pinch of sea salt
Wet ingredients:
• 100ml (3.3fl oz) soya milk
• 2 tbsp apple/white cider vinegar
• Juice from 1 orange and ½ lemon/lime (and zest) totalling 100ml
• 2 tsp vanilla essence
• 70ml (2.3fl oz) sunflower oil
Topping:
• Sugar Syrup: Juice from 1 orange and ½ lemon with 2 tbsp caster sugar or maple syrup OR
• Lemon Icing: 4 tbsp icing sugar with juice from ½ lemon
1 Preheat oven to 180°C/360°F /Gas 4.
2 Mix the dry ingredients well.
3 Mix all the wet ingredients well.
4 Mix the two together to form a smooth lump-free batter.
5 Grease a loaf tin and pour the batter in.
6 Bake in the oven for 30 minutes and check with a knife that once inserted into the cake, the knife comes out clean otherwise cook for another 5-10 minutes.
7 Leave to cool.
8 Warm sugar syrup through in a pan and drizzle over the sponge once cooled down a little or mix the icing sugar with lemon juice to make a smooth icing before pouring on top of the cooled down cake.
9 Garnish the top of the cake with the citrus zest.
10 Slice and serve on its own or with some coconut yoghurt for a refreshing twist.
