Fruit & Nut Oat Cookies
Makes approx. 8 cookies
Oaty cookies that are high in protein, as well as deliciousness!
• 180g (6.3oz) oats
• 2 bananas, mashed
• 50g (1.7oz) fresh, frozen or dried berries or 50g (1.7oz) dried fruits (I love a mixture of vine fruits)
• 140g (4.9 oz) nut butter of your choice
• 30g (1oz) chopped nuts of your choice (I love walnuts or hazelnuts)
• 1 tsp vanilla essence
Optional:
• 40g (1.4oz) dark chocolate
chips/nibs
1 Preheat oven to 170°C/340°F/Gas 3.
2 Add all the ingredients, except the chocolate chips and nuts, to a bowl and mix well.
3 Add in the chocolate chips and nuts and mix well.
4 Line a flat baking tray with baking paper.
5 Divide the mixture into 8 balls and lay on the baking tray with space in between each on and flatten each ball with the back of a tablespoon (as thin or thick as you like).
6 Bake in the oven for 15 minutes, until brown.
7 Cool before enjoying.
8 Will keep for 1 week if stored in an airtight container in a cool area (store cupboard/pantry).
