Cod, chorizo and butter bean one-pan
This recipe is comforting and quick. The spicy oils from the chorizo in this dish add a lovely warmth and help to keep the fish moist.
Serves 4
100g chorizo, sliced
1tsp paprika
400g butter beans, drained and rinsed
250ml white wine
4 x 150g cod fillets
2tbsp olive oil, to serve
1 Fry the chorizo in a deep frying pan over a medium heat for
2-3 mins. Add the paprika and fry for 1 min more.
2 Tip in the butter beans, pour in the white wine and push the fish fillets down into the beans. Cover the pan with foil and leave on a medium heat for 10 mins, until the fish is cooked through. Drizzle with olive oil to serve.
