To make: In a microwave-safe bowl, microwave 6 cups of riced cauliflower for 8 minutes, then drain. Mix cauliflower, 1 egg, 1⁄2 cup of shredded Parmesan and 1⁄4 cup of shredded mozzarella; season. Press into 9" round; add desired toppings. Bake on baking sheet at 400°F for 20 minutes.
