For a lighter take on crust for pizza or quiche, NBC TV host Natalie Morales uses cauliflowe­r and Parmesan cheese. “It’s low-carb and gluten-free,” she notes in her cookbook, At Home with Natalie. To make: In a microwave-safe bowl, microwave 6 cups of riced cauliflowe­r for 8 minutes, then drain. Mix cauliflowe­r, 1 egg, 1⁄2 cup of shredded Parmesan and 1⁄4 cup of shredded mozzarella; season. Press into 9" round; add desired toppings. Bake on baking sheet at 400°F for 20 minutes.
